Soda

Core ingredients
2 cups Xylitol
1 tsp salt
2 cups lemon juice
2 tsp vanilla extract
8 black tea bags

Spiced syrup:
4 tbs cardamom
4 tbs coriander
4 tsp licorice root
2 cinnamon sticks
4 inches ginger root, sliced thin
2 tsp fennel (optional)
2 tsp fenugreek (optional)
4 cloves (optional)
4 inches lemon grass (optional)

Fruit syrup:
1-2 cups mashed fruit
OR 1/2 – 1 cup of fruit juice

Lemon lime syrup:
1 cup lime juice

Ginger ale syrup:
4-12 inches of ginger root, sliced thin

Strawberry lemonade syrup:
Additional 1 cup lemon juice
2 cups mashed strawberries

Put the core ingredients in a pot (except lemon juice, lime juice, and vanilla), and add the other ingredients for the desired syrup. Add water until it just covers the contents. Bring to a boil, add 2 cups of xylitol and stir till dissolved. Remove tea bags then cover and simmer for 30 minutes. Keep covered, and allow to cool for several hours.

Strain the syrup. If there is less than 2 cups of syrup, add water to bring it to 2 cups. Then add lemon juice (and lime juice if using) and refrigerate. It keeps for a long time.

Using the soda:
Put 1-2 tablespoons of syrup in the bottom of a pint glass and fill with soda water.
